FLAGSHIP BEERS

  • 7*11 BLONDE ALE: Light, crisp, and refreshing! Light bread notes from the malt with a slight fruit aroma from the yeast and hops. (5% ABV)

  • CADENCE PORTER: This full-bodied black as night ale is smooth with a velvety texture. Notes of roasted coffee beans and dark chocolate fill the pallet and nose. (6% ABV)

  • PELOTON PALE ALE: Bright hop flavor and aroma dominated by tropical fruits, including mango and pineapple. The beer finishes smooth and balanced with three varieties of malts. The hop flavor and aroma are extra pungent due to the dry hopping; adding extra hops during fermentation. (6% ABV)

  • WEE-HEAVY SCOTCH STRONG: We used seven varieties of malts to brew this bomb of a brew! Deep rich malt character slightly warms from the high alcohol content. (8% ABV)

meet our head brewer

- James McCoy -

James is a SIU alum who learned how to brew by home brewing in college. After school, James decided he wanted to follow his passion for brewing and make it a lifelong career.

In 2014, James was hired on as the Head Brewer here at the St. Nicholas Brewing Co. The 1st batch of beer brewed on the date of 7-11-14 was the 7-11 Curser Blonde and it was a major hit. He went on to create the full line of flagship beers. In 2017, James moved on to grow his knowledge of beer brewing at Bell’s in Kalamazoo Michigan. With some new skills learned, James returned to St. Nicholas in 2021.

When James is not in the brewery, he enjoys cooking BBQ and playing board games. If you see him around the brewery, come say hello! He is always happy to chat about the beer you're drinking or the next beer that is being brewed.

- Carl Bundy -

Meet Carl Bundy, a distinguished Certified Cicerone® and Assistant Brewer at St. Nicholas Brewing Co., whose journey in the brewing world is a blend of passion, dedication, and community spirit. Born and raised in Mt. Vernon, Illinois, Carl's path to brewing excellence began with a deep-rooted love for his hometown and a desire to contribute positively to his community.

Brewing Science and Operations Expertise

Carl's academic foundation in brewing was laid at St. Louis University, where he graduated in 2021 with a certification in Brewing Science and Operations. Under the mentorship of some of St. Louis's most experienced and knowledgeable industry leaders, Carl mastered the brewing process from grain to glass, equipping him with the skills to excel in the dynamic world of craft brewing.

Journey to Certified Cicerone®

In December of 2023, Carl achieved the prestigious title of Certified Cicerone®, a recognition reserved for hospitality professionals with a proven expertise in selecting, acquiring, and serving a wide range of beers. This certification is akin to the beer industry’s equivalent of a Wine Sommelier, highlighting Carl's comprehensive understanding of beer and his commitment to excellence in the craft beer industry.

A Commitment to Community and Craft

Carl's brewing career at St. Nicholas Brewing Co. began in 2021, and he quickly progressed from washing kegs part-time to becoming an Assistant Brewer in May of 2022. His role involves brewing on the 7-barrel system and managing inventory across three locations, showcasing his adaptability and passion for brewing. Carl's belief in the power of community led him to establish The Mt. Vernon Brewers Festival in 2019, an event that embodies his commitment to bringing people together through their shared love of beer, food, and music.

Personal Life and Community Involvement

Residing in Mt. Vernon with his wife Valerie, Carl enjoys spending quality time with his niece Olivia and remains deeply involved in his community. His journey from a part-time keg washer to a Certified Cicerone® at St. Nicholas Brewing Co. reflects his dedication to his craft and his community.

Not Your Boyfriend’s Beer Club

Not Your Boyfriend’s Beer Club was started August 2019 at St. Nicholas Landmark in Chester, IL as a way to bring craft beer lovin’ women together. The club has monthly meetings which include different activities, free beer, and loads of fun. To join, come see us at St. Nicholas Landmark. It’s only $60 for an annual membership! NYBBC also has a chapter at our Flagship location in Du Quoin. Illinois that meets monthly. Our new location at the Southern Illinois Airport plans to launch a new chapter as well!

The care put into the food menu is mirrored in the brews, which are categorized as “naughty” or “nice” – capitalizing on the jolly side of the brewery’s moniker. Nice brews use traditional recipes, while beers earn a spot on the naughty list when the brewmaster adds nontraditional ingredients. A popular naughty beer, the seasonal strawberry blonde is made with fresh strawberries sourced from southern Illinois. If you like fruity beers in the spring and summer, we also recommend the peach ale, raspberry wheat and Pelo-POG with passionfruit, orange and guava. In total, the brewery offers 12 beers (four flagship brews and eight seasonal options) on tap, all made onsite. - Feast Magazine
