About the St. Nicholas 

Since the 1800's, the St. Nicholas Hotel has been a landmark in Du Quoin, Illinois. After a devastating fire, the owners reconstructed The Hotel in 1879 at its original location at 12 Oak Street. For the next 125 years The Hotel served the people of Southern Illinois providing rooms, food, drink, and entertainment. Its location, situated near the train station, provided an ideal hub for travelers and residents. 

By 2005 The Hotel was closed for business and abandoned. A piece of Du Quoin history was at great risk of being demolished, but The Hotel was identified as a historic site and the importance of "saving" it was recognized throughout the city. In 2009, renovations began toward the next phase of the building, the St. Nicholas Brewing Company. Years of neglect meant layers of wear had to be removed. The façade has been restored and the building has been structurally reinforced. After years of work, the St. Nick is ready to be a focal point in Du Quoin once more. The St. Nicholas Brewing Company opened its doors in August 2014  as a microbrewery and restaurant. All of our beer is  brewed in house and paired with your favorite pizzas and sandwiches. We are so happy to share our  love for craft beer with the rest of Southern Illinois!

The owners of the St. Nicholas Brewing Company share a love beer, bicycles, and great food. Our logo brings the past and the present together. All of our house brews are produced on-site by our brewmaster, featuring the finest ingredients. The precision and techniques used are essential to develop the perfect flavor. Make sure to ask if tours are available next time you're in to learn more about our process! 

Flagship Beers

7*11 Blonde Ale

Light, crisp, and refreshing! Light bread notes from the malt with a slight fruit aroma from the yeast and hops. 5% ABV 16oz pint glass

Cadence Porter

This full-bodied black as night ale is smooth with a velvety texture. Notes of roasted coffee beans and dark chocolate fill the pallet and nose. 6% ABV 16oz pint glass


Bright hop flavor and aroma dominated by tropical fruits, including mango and pineapple. The beer finishes smooth and balanced with three varieties of malts. The hop flavor and aroma are extra pungent due to the dry hopping (add extra hops after fermentation is complete). 5.6% ABV 16oz pint glass

Scotch Strong Ale/Wee-Heavy

We used seven varieties of malts to brew this bomb of a brew! Deep rich malt character slightly warms from the high alcohol content. 8% ABV 12 oz snifter

Small Batch

Belgian Quadruple

This big bodied belgian has notes dark stone fruits with a sweet finish.   9.2% ABV 12oz snifter glass



Drinks like a pale ale but looks like a stout. This dark ale is loaded with Citra hops, dry hopped for an intense citrus aroma. These hops blend nicely with the dark toasty malts to results in a interesting take on a dark ale.  5.7% ABV 16oz pint glass 

Golden Vienna Lager

Our 1st Lager showcases brewing simplicity with only two malts used, German Golden Vienna and a touch of German Aromatic.  5% ABV 16oz pint glass


This hop bomb of a beer packs a punch.  Huge hop flavor and aroma with pine, citrus, and herbs.  Surprisingly smooth for a beer this large.  9.5% ABV 12 oz snifter


We used Organic Columbian coffee from Jen’s Joe, in Carbondale, and blended it with a stronger version of our porter.  7.5% ABV 16oz pint glass

Simcoe® IPA

Showcasing golden promise malts and Simcoe® hops, this IPA has a solid malty English backbone to support the pungent piney-ness of the hops.  6.6% ABV 16oz pint glass


Brewed with French pilsner malt, America Midwestern wheat, and exclusively hopped with German Hallertau hops. Fermented with a special saison strain of yeast that leads to the bright juicy fruit aroma.   6% ABV 12oz snifter

Wee Little Scottish 80 Shilling

We took our Wee heavy recipe and cut it in half to make a malt-forward session ale. It's light bodied, easy drinking, and pours a beautiful dark copper with notes of toasted and caramelized malt.  4% ABV 16oz pint glass

Growlers available for all beers!


Tours available on the 1st and 3rd Saturdays of the month, beginning at 2:00 PM and 4:00 PM. Tours are $10 per person and include 4 tastings at the end of the tour and St. Nick glass to take home!

About the Brewmaster

James McCoy

Originally from Homewood, Illinois, James first moved to Southern Illinois to study Psychology at SIU. Throughout his time in Carbondale, he learned more about brewing beer after receiving a home brew kit for Christmas in 2009. A hobby turned into obsession, and soon James was building his own equipment and drafting recipes. James met other home brewers in the area who shared his passion, and the Southern Illinois Brewers Club was soon formed.

Through other members in the club James was introduced to the St. Nicholas Brewing Company team. He got on board with the St. Nick early on, and while the building was being reconstructed, James moved north to attend Siebel Institute of Technology to learn proper professional brewing techniques. In addition to spending time at the Institute, James helped out at small breweries to gain hands-on experience and learn as much as possible. Now after four and a half years passion and dedication, James has turned his one-time hobby into a career at the St. Nicholas Brewing Company. We could not be more thankful to have him!
