About the St. Nicholas 

Since the 1800's, the St. Nicholas Hotel has been a landmark in Du Quoin, Illinois. After a devastating fire, the owners reconstructed The Hotel in 1879 at its original location at 12 Oak Street. For the next 125 years The Hotel served the people of Southern Illinois providing rooms, food, drink, and entertainment. Its location, situated near the train station, provided an ideal hub for travelers and residents. 

By 2005 The Hotel was closed for business and abandoned. A piece of Du Quoin history was at great risk of being demolished, but The Hotel was identified as a historic site and the importance of "saving" it was recognized throughout the city. In 2009, renovations began toward the next phase of the building, the St. Nicholas Brewing Company. Years of neglect meant layers of wear had to be removed. The façade has been restored and the building has been structurally reinforced. After years of work, the St. Nick is ready to be a focal point in Du Quoin once more. The St. Nicholas Brewing Company opened its doors in August 2014  as a microbrewery and restaurant. All of our beer is  brewed in house and paired with your favorite pizzas and sandwiches. We are so happy to share our  love for craft beer with the rest of Southern Illinois!

Current Brews

All of our house brews are produced on-site by our brewmaster, featuring the finest ingredients. The precision and techniques used are essential to develop the perfect flavor. Make sure to ask if tours are available next time you're in to learn more about our process! 

Flagship Beers

7*11 Blonde Ale

Light, crisp, and refreshing! Light bread notes from the malt with a slight fruit aroma from the yeast and hops. 5% ABV 16oz pint glass

Cadence Porter

This full-bodied black as night ale is smooth with a velvety texture. Notes of roasted coffee beans and dark chocolate fill the pallet and nose. 6% ABV 16oz pint glass


Bright hop flavor and aroma dominated by tropical fruits, including mango and pineapple. The beer finishes smooth and balanced with three varieties of malts. The hop flavor and aroma are extra pungent due to the dry hopping (add extra hops after fermentation is complete). 5.6% ABV 16oz pint glass

Scotch Strong Ale/Wee-Heavy

We used seven varieties of malts to brew this bomb of a brew! Deep rich malt character slightly warms from the high alcohol content. 8% ABV 12 oz snifter


Belgian dubbel

This strong Belgian brown ale is full of dark fruit flavors from the specialty grains supported by banana and clove from the Belgian yeast; an enjoyable introduction to Belgian dubbels. 7.9% ABV 12oz snifter

Belgian tripel

This strong golden ale showcases the fruity, spicy esters of the Belgain yeast. 8.7% ABV 12oz snifter

Bohemian Pilsner

Gently hopped with Kazbek for light lemon crispness and cold conditioned making a smooth mellow lager. 5% ABV 16oz pint glass

Cream Ale:

Called a cream ale because of the creaminess from the styles typical corn and dextrose additions, this is smooth and crisp. 5.6% ABV 16oz pint glass

Dry hopped Belgian Guava

The tropical pink guava and citrus notes from the Azecca hops play nicely with the spicy/fruity esters of the Belgian yeast. 6.3% ABV 16oz pint

LST-325 Session IPA

This light session IPA packs a potent hop punch. Brewed in honor of the U.S.S. LST-325 it has 3 grains, 2 dry hop additions, and 5 different varieties of hops for a soft easy drinking complex herbal spicyess that's swiggable all day long.

4.8% ABV 16oz pint glass

Raspberry Cocoa Milk Stout

Are beloved Cocoa Milk Stout dressed up in its holiday finery with extra lactose and 164 pounds of Raspberries. A classic pairing, the tart fruity raspberries plays nicely with the roasty chocolaty stout. 7% ABV 12 oz snifter

Velo Mellow

This Belgian style table beer is light and easy drinking, slightly fruity from the Belgian yeast with notes of pear and clove.  5% ABV 16oz pint glass.

Small Batch Beer

When our brewers want to do some experimenting they brew a 5-10 gal. batch.

Tours available on the 1st and 3rd Saturdays of the month in Du Quoin, beginning at 2:00 PM and 4:00 PM. Tours are $10 per person and include 4 tastings at the end of the tour and St. Nick glass to take home!

Paul Plett

Paul grew up in Rockford, IL and graduated from Luther College with a B.A. in Computer Science.  It only took 10 years as a web developer in NJ and NY to learn he’d rather be a brewer.  A hobby of Sunday afternoon brewing in the St. Bartholomew's Church beer co-op quickly escalated to a part time position with NJ Beer Co.  After learning the ropes of industrial brewing in North Bergen, Paul joined the team at St. Nicholas in the fall of 2015.
