About the St. Nicholas 

Since the 1800's, the St. Nicholas Hotel has been a landmark in Du Quoin, Illinois. After a devastating fire, the owners reconstructed The Hotel in 1879 at its original location at 12 Oak Street. For the next 125 years The Hotel served the people of Southern Illinois providing rooms, food, drink, and entertainment. Its location, situated near the train station, provided an ideal hub for travelers and residents. 

By 2005 The Hotel was closed for business and abandoned. A piece of Du Quoin history was at great risk of being demolished, but The Hotel was identified as a historic site and the importance of "saving" it was recognized throughout the city. In 2009, renovations began toward the next phase of the building, the St. Nicholas Brewing Company. Years of neglect meant layers of wear had to be removed. The façade has been restored and the building has been structurally reinforced. After years of work, the St. Nick is ready to be a focal point in Du Quoin once more. The St. Nicholas Brewing Company opened its doors in August 2014  as a microbrewery and restaurant. All of our beer is  brewed in house and paired with your favorite pizzas and sandwiches. We are so happy to share our  love for craft beer with the rest of Southern Illinois!

Current Brews

All of our house brews are produced on-site by our brewmaster, featuring the finest ingredients. The precision and techniques used are essential to develop the perfect flavor. Make sure to ask if tours are available next time you're in to learn more about our process! 

Flagship Beers

7*11 Blonde Ale

Light, crisp, and refreshing! Light bread notes from the malt with a slight fruit aroma from the yeast and hops. 5% ABV 16oz pint glass

Cadence Porter

This full-bodied black as night ale is smooth with a velvety texture. Notes of roasted coffee beans and dark chocolate fill the pallet and nose. 6% ABV 16oz pint glass


Bright hop flavor and aroma dominated by tropical fruits, including mango and pineapple. The beer finishes smooth and balanced with three varieties of malts. The hop flavor and aroma are extra pungent due to the dry hopping (add extra hops after fermentation is complete). 5.6% ABV 16oz pint glass

Scotch Strong Ale/Wee-Heavy

We used seven varieties of malts to brew this bomb of a brew! Deep rich malt character slightly warms from the high alcohol content. 8% ABV 12 oz snifter


English Amber Ale

This light amber ale is more restrained than it’s American counterpart, with a bit less roast and a nice malt character to balance the cascade hops.  5.7% ABV 16oz pint glass

Cream Ale

Called a cream ale because of the creaminess from the styles typical corn and dextrose additions, this is smooth and crisp. 5.6% ABV 16oz pint glass

Mosaic Session IPA

This light session IPA packs a potent hop punch. Exclusively hopped with Mosaic hops, this beer is grassy, earthy, and tropical. 4% ABV 16oz pint glass.


The lemon and pepper flavors from the Kazbeck hops brighten the light caramel notes from the Munich malt. 7.6% ABV 12oz snifter.


Light bodied wheat brewed with over 160 lbs. of raspberries. It's a slightly tart extremely refreshing ale. 6% ABV 16oz pint glass

Trans AM Hazy IPA

This juicy, double dry hopped, IPA is brewed with vanilla beans, pineapple, and an abundance of tropical late addition hops (Michigan Copper, Mosaic, Citra).  5% ABV 16oz pint.

berliner weisse

A classic German style sour wheat beer dating back to the 16th century. Prefect for a hot day on the boat. Kettle soured with lactobacillus plantarum to ~3.6 PH for a mild tart lemony sour..  3.9% ABV 16oz pint.

honey wheat

Brewed with Midwestern wheat, barley and honey from our friends at Leedle Hume Bees. Super smooth, light, a hint of sweetness at the start and finishes dry. 5% ABV 16 oz pint glass


This strong lager was brewed in early spring and then cellared all summer long. Made with German specailty malts, this amber lager is smooth, clean, and rather rick with a soft, complex, and elegant mouthfeel. 7% ABV 16 oz pint glass

Tours available on the 1st and 3rd Saturdays of the month in Du Quoin, beginning at 2:00 PM and 4:00 PM. Tours are $10 per person and include 4 tastings at the end of the tour and St. Nick glass to take home!

Paul Plett

Paul grew up in Rockford, IL and graduated from Luther College with a B.A. in Computer Science.  It only took 10 years as a web developer in NJ and NY to learn he’d rather be a brewer.  A hobby of Sunday afternoon brewing in the St. Bartholomew's Church beer co-op quickly escalated to a part time position with NJ Beer Co.  After learning the ropes of industrial brewing in North Bergen, Paul joined the team at St. Nicholas in the fall of 2015.
